I recently shared a recipe for The Easiest Bread You’ll Ever Make.

That recipe creates simple round loaves and baguettes, but it also lends itself well to one of my family’s favorites – Simple Skillet Naan Bread.

Another frugal favorite we enjoy often is pizza.

Weary From The Race

Life is a race.

Not that I have already obtained this or am already perfect, but I press on to make it my own, because Christ Jesus has made me His own. Brothers, I do not consider that I have made it my own. But one thing I do: forgetting what lies behind and straining forward to what lies ahead, I press on toward the goal for the prize of the upward call of God in Christ Jesus.                                                                             ~ Philippians 3:12-14

In the Bible, life is compared to a race.

It has been said that life isn’t a sprint, but a marathon. I have never run a marathon, but I’ve exercised enough to know that when one takes on a marathon, he knows it isn’t going to be easy. Most of us are in this for the long haul.

So should we be surprised when it gets tough? We know it isn’t always going to be easy. Sometimes it will be downright difficult. Sometimes it stops us in our tracks and brings us to our knees. If we know this, why do we struggle so?

I would guess one reason is that we don’t like being uncomfortable. Yet, I know no one who would describe running a marathon as comfortable. Continue reading →

No-Bake Energy Bites

We had the privilege of enjoying a wonderful Father’s Day dinner with some very dear friends of ours. We were served BBQ beef sandwiches with homemade cole slaw and an incredible homemade berry pie complete with vanilla ice cream. The food was wonderful and the company even better.

Easy, Healthy Corn & Black Bean Salad

I recently posted about baking during the summer without heating up the kitchen. If you missed that post, you can read it here.

Another well known trick is enjoying lots of salads, sandwiches, and smoothies. This Corn & Black Bean Salad is a favorite. It’s my usual fare at potlucks and it is always a hit.

I call it a salad because that’s the way I enjoy it. You could take this a step further by serving it over a bed of fresh lettuce with your favorite salad dressing. I’m dreaming of a spicy, Chipotle Ranch dressing. Add some chopped chicken, and you’ve got a complete meal!

Others call it a salsa because they enjoy it with chips, in fish tacos, or on top of a grilled steak. Any way you choose to serve it, it is easy, delicious, healthy, and it won’t heat up the kitchen.
