Peanut Butter Cup Brownies

by

peanut-butter-cup-brownies

Who doesn’t love the union between peanut butter and chocolate?

Admittedly this isn’t the quickest or most frugal of my recipes, but when that craving hits, this one is sure to please. With options like almond flour, whole wheat flour, and applesauce, it is healthier than the favorite store bought candy.

I’ll give you the peanut butter cup version, but just in case you are looking to make yours into a traditional brownie, I’ll show you how to do it that way, too. Continue reading →

One-Bowl {Healthier} Chocolate Cupcakes

by

chocolate-cupcakes

As you probably already know, I love one-bowl baking recipes. Less mess means more time for eating cupcakes!

I also love a healthier dessert. Again, more cupcakes!

I make these with pumpkin, squash, or applesauce, depending on what I have on hand. These additions add moisture and some health benefits like vitamins, antioxidants, and fiber.

In other words, they help me justify eating a chocolate cupcake! (or 3) Continue reading →

Must-Make Cracker Roca

by

cracker-roca

My life changed that night at Bible study. It was the study, for sure, but the Cracker Roca helped, too.

A friend of mine showed up with the most delicious version of Roca I had ever tasted. When she told me how simple it was to make, I couldn’t believe it. I had to go home and make it for myself. Continue reading →

Lemon Coconut Shortbread Cookies (with variations)

by

shortbread-cookies

Shortbread is one of my favorite cookies. I had lemons and coconut on hand so I wanted to see how well they would blend in a shortbread. I’m so glad I did, because these babies are keepers.

I cook mine at 300 degrees because I’m a rebel I really don’t want them over baked. These have a lot of butter in them so they will brown quickly. The perfect shortbread is not going to be a golden brown. They are done right before they start to brown. Err on the side of under done because they will continue to cook while they sit on the baking sheet.

They have a slight lemon taste that isn’t overwhelming, which is fine with me because it’s really all about the butter! Am I right? Continue reading →

Healthier Coconut Oatmeal Chocolate Chip Cookies

by

coconut-oatmeal-cookies

This is a cookie I can feel good about!

Well, truth be told, I’m not sure there is a cookie I can’t feel good about. Unless they have walnuts or pecans in them. Walnuts and pecans do bad things to me. Feel free to add them to yours, but don’t invite me over.

Anyway, back to the good cookies…

Not only do these cookies taste delish, but they are chock full of healthy, filling ingredients like coconut, oatmeal, whole grain flours, and Craisins. Continue reading →

The Best Buttery, Caramel-ly Pancake Sauce EVER!

by

syrup

A few years ago, I came across this recipe – Tasty Kitchen’s Liquid Gold (Pancake Syrup). You can click on the red text to read the original recipe.

I’ve adapted the original several times over the years until I have, in my opinion, perfected this recipe.

We enjoy this on our pancakes, waffles, scones, cakes, and muffins. It is also delicious on ice cream, popcorn, and in our morning oatmeal. We like dipping apple slices into it for a sweet snack.

This syrup is so full of buttery goodness that we don’t use any additional butter on our pancakes, waffles, scones, or muffins! Continue reading →

Cinnamon Skillet Apples

by

Cinnamon Skillet Apples

Not that I ever feel guilty about eating an apple pie, but I don’t always want to take the time to make a crust. I’m kinda lazy that way.

Unless you have a countertop convection oven, you don’t want to be heating up your kitchen in the summer by baking a pie. If you missed my post on baking in the summer without heating up the kitchen, you can read that here.

My Cinnamon Skillet Apples are the perfect alternative. You can have the flavors of the All-American Apple Pie without the downsides.

As usual, don’t take my word for it. Give these babies a try. You won’t regret it. Continue reading →
