Simple {Two Ingredient} Coconut Chocolates

Most of us are trying to watch our weight by eating a little healthier. But let’s be honest, we all need a little chocolate now and then. Tell me I’m not alone here.

I have found that it usually takes just a bite or two (or three or four!) to satisfy my sweet tooth and my chocolate craving. So when I found myself in my kitchen with a package of dark chocolate chips and a bag of sweetened coconut, you know I was thinking of a Mound’s bar.

I did an online search and sure enough, there are many recipes for making the homemade candy yourself. They all called for ingredients that I didn’t have on hand, though. I knew there needed to be an easier way.

Simple Baked Chicken Wontons

One-Bowl {Healthier} Chocolate Cupcakes

As you probably already know, I love one-bowl baking recipes. Less mess means more time for eating cupcakes!

I also love a healthier dessert. Again, more cupcakes!

I make these with pumpkin, squash, or applesauce, depending on what I have on hand. These additions add moisture and some health benefits like vitamins, antioxidants, and fiber.

One Bowl Chocolate Peppermint Cookies {Healthier Version}

chocolate-cookies The only thing I love more than a delicious cookie is a healthier version of a delicious cookie.

Oh, and candy canes!

I love all things candy cane and peppermint, especially when they are paired with chocolate.

And since I don’t love to do dishes, one bowl recipes are very appealing to me.

These cookies encompass all of those features.

They are also very versatile.

During Christmas, I make this peppermint version, but during the rest of the year, I experiment with other flavors. I have used chocolate chips for a double chocolate version, creme de mint chips, white chocolate chips, and (my second favorite) peanut butter chips.

I’ve adapted these cookies to be healthier than most by cutting the sugar by half of what the average cookie recipes call for and by using whole wheat flour rather than all-purpose. Continue reading →

Lemon Coconut Shortbread Cookies (with variations)

Shortbread is one of my favorite cookies. I had lemons and coconut on hand so I wanted to see how well they would blend in a shortbread. I’m so glad I did, because these babies are keepers.

I cook mine at 300 degrees because I’m a rebel I really don’t want them over baked. These have a lot of butter in them so they will brown quickly. The perfect shortbread is not going to be a golden brown. They are done right before they start to brown. Err on the side of under done because they will continue to cook while they sit on the baking sheet.

They have a slight lemon taste that isn’t overwhelming, which is fine with me because it’s really all about the butter! Am I right? Continue reading →

Healthier Coconut Oatmeal Chocolate Chip Cookies

Well, truth be told, I’m not sure there is a cookie I can’t feel good about. Unless they have walnuts or pecans in them. Walnuts and pecans do bad things to me. Feel free to add them to yours, but don’t invite me over.

One-Bowl Glazed Lemon Cupcakes

My mother-in-law left a bag of lemons for me after her last visit here. As you might imagine, I am certainly making use of them, especially when it comes to dessert! That being said, I do have Chicken Piccata on the menu this week. It’s not something I make too often as it isn’t a favorite of the boys in my family, but it certainly is one of mine. Anyhoo, I digress.

Back to dessert…

Upon tasting these cupcakes, my husband commented that they taste like a Lemon Dream Cake from Coco’s Restaurant and Bakery. We no longer live anywhere close to that restaurant, but that used to be my requested birthday dessert. To have my husband compare the tastes is a huge compliment, especially when I can guarantee that this version is healthier.

How To Stretch Buttermilk

I use a lot of buttermilk!

While I don’t drink it, it’s my favorite milk for all baked products. I use it for pancakes, waffles, muffins, scones, cakes, etc. I also use it in my Buttery, Caramel-ly Pancake Sauce and my Homemade Hamburger (or Hot Dog) Buns.

Oatmeal Raspberry Muffins w/ Chocolate Chips

When my family and I spotted a small patch of wild raspberries growing near the side of the road on public property, we made sure to go back to the area as soon as possible to pick what we could.

We ended up with about a half to three-quarters of a cup of small raspberries so I thought that the perfect use for them would be in a batch of homemade muffins. Judging by how quickly they were devoured, I would say it was a good idea.

A few years ago, I came across this recipe – Tasty Kitchen’s Liquid Gold (Pancake Syrup). You can click on the red text to read the original recipe.

I’ve adapted the original several times over the years until I have, in my opinion, perfected this recipe.

We enjoy this on our pancakes, waffles, scones, cakes, and muffins. It is also delicious on ice cream, popcorn, and in our morning oatmeal. We like dipping apple slices into it for a sweet snack.

Not that I ever feel guilty about eating an apple pie, but I don’t always want to take the time to make a crust. I’m kinda lazy that way.
