Expect To See God

by

sunset-trees

Remember when you first fell in love with your spouse? They could do no wrong. You know as well as I do that that is not the case. The truth is that we chose not to see it when they did.

Conversely, when there is someone we don’t particularly like, isn’t it true that all that we will see in them is the negative?

When we seek to see the good in people, we will. When we seek to see the less than desirable, that is exactly what we’ll find. Continue reading →

The Easiest Brownies You’ll Ever Make (w/ a Surprise Healthy Ingredient!)

by

pumpkin-brownies

If you know me, you know 2 things:

  1. I make most things from scratch and very little from a box or can.
  2. I’m not perfect.

As a result of #2, you will occasionally find a boxed brownie mix in my home. The idea is that I have something on hand for last minute baking for church, company, or a visit to a friend’s home.

That’s how it works in theory. Continue reading →

3 Things We Wish We Had Done When We Had More Money

by

money-background

Things have not always been as tight for our family as they are now. They’ve always felt like they have been, but as our income has consistently declined over the last 8 or so years, we’ve had to learn to make do with less and less.

In retrospect, we had it pretty good before. We had consistency and reliability. Now we have neither. I wish we had realized then how good we had it. Instead, we focused more on how little we had.

They say hindsight is 20/20, right? I’m sharing this personal information in hopes that you can learn from our experience.

Here’s what we wish we had done then: Continue reading →

5 Ways To Show Your Children You Love Them

by

hiking

As parents, we all want our children to know that we love them.

Here are my top 5 tips on how to do just that.

1. Listen to them.

Look them in the eye as they speak to you. If they are little, get down on their level. Very often, my kids come to chat with me when I am busy at a task. Sometimes I remember to stop my busy hands, look up from what I am doing, and make eye contact with them.  It is important that we take the time to show our children respect in this way.

Today, I am honored to be sharing this Guest Post over at The Deliberate Mom where Jennifer blogs about faith, parenting, and homeschooling. I hope you’ll spend a little time there being blessed by her words. Not only is she an inspiration to me, but she has a kind heart and a warm personality.

The BEST White Chicken Chili

by

white-chicken-chili

Most recipes I remake. Sometimes it is to make them healthier. Other times it’s to make them more frugal.

There are two notable exceptions, however. One is the enchilada sauce I use in The BEST EVER Enchilada Soup and the other is Eat, Live, Run’s White Chicken Chili. Feel free to hop on over and check out her recipe. Mine is a slightly adapted version.

I will make a pot and eat it for several days. Trust me, it will be eaten before it has a chance to go bad.

Here is how I make my version: Continue reading →

The Art of Getting

by

Bible-and-cup

“The generous soul will be made rich, and he who waters will also be watered himself.” ~Proverbs 11:25 (NKJV)

These past few weeks during our move back to the Great Northwest, my wife and I rediscovered the blessing of those who were willing to put themselves out for us. These people were willing to put a hold on their own world to enter our world to provide some needed help, and at a time when we could not give back. I thought of this Scripture. Continue reading →

When All You Can Do Is Pray

by

folded-hands

There are many times in life when those we love are hurting.

When we would do anything to ease their suffering, solve their dilemma, or just have the perfect words to comfort them.

Sometimes all we can do is pray.

Today I wonder if there is much more to that simple statement than meets the eye.

Recently I was listening to a sermon on prayer by Charles Price and this is what he said,

Prayer is not something we do for the work of God, prayer IS the work of God.”

This statement made me think about prayer and how often we underestimate its value in our walk with the Lord. Continue reading →

Oatmeal Apple Scones w/ Coconut & Chocolate Chips

by

apple-scone

Hands down, my favorite breakfast food is a warm, fresh scone. Carbs and butter – what can I say? Don’t let the high price of butter make this hard to swallow. Trust me, these go down just fine.

When my dear friend gave me apples from her tree and I stumbled upon Naïve Cook Cooks’ recipe for apple scones, I knew what needed to grace my breakfast table. Using an adaptation of her recipe, I came up with these beauties. Continue reading →

Heaven, Hell, and Life After Death (A Giveaway!)

by

life-after-death

Do you have a clear picture of life after death?

Do you know where you are going to spend eternity?

This subject is a very hot topic among believers, non-believers, and everyone in between.

I believe this is an important question for all of us to reconcile in our minds and in our hearts. What we believe about our eternal lives directly affects our earthly lives. Continue reading →

Lemon Coconut Shortbread Cookies (with variations)

by

shortbread-cookies

Shortbread is one of my favorite cookies. I had lemons and coconut on hand so I wanted to see how well they would blend in a shortbread. I’m so glad I did, because these babies are keepers.

I cook mine at 300 degrees because I’m a rebel I really don’t want them over baked. These have a lot of butter in them so they will brown quickly. The perfect shortbread is not going to be a golden brown. They are done right before they start to brown. Err on the side of under done because they will continue to cook while they sit on the baking sheet.

They have a slight lemon taste that isn’t overwhelming, which is fine with me because it’s really all about the butter! Am I right? Continue reading →

God Is For Us

by

Bible-and-cup

When I cry out to You,
Then my enemies will turn back;
This I know, because God is for me.

~Psalm 56:9 (NKJV)

I may have told you about my friend George once before. He’s a pretty big man. The kind I would describe as one who could go bear hunting with a switch and give the switch to the bear! But, George has a friend he calls “Big Larry.” I once met Big Larry and, sure enough, he was huge. George always said that when he and Big Larry were together, no one messed with him (George).

This is the thought that came to mind when I read this Scripture. Continue reading →

Healthier Coconut Oatmeal Chocolate Chip Cookies

by

coconut-oatmeal-cookies

This is a cookie I can feel good about!

Well, truth be told, I’m not sure there is a cookie I can’t feel good about. Unless they have walnuts or pecans in them. Walnuts and pecans do bad things to me. Feel free to add them to yours, but don’t invite me over.

Anyway, back to the good cookies…

Not only do these cookies taste delish, but they are chock full of healthy, filling ingredients like coconut, oatmeal, whole grain flours, and Craisins. Continue reading →
